Pretty & Pink Veggie Burger

This healthy recipe will really hit the spot for anyone looking to get fit!
Ingredients:
4 Cups Black Beans, mostly mashed
4 Beets, shredded
2 Cups cooked & cooled Brown Rice
1 Cup Breadcrumbs
1 Egg
2 Onions, diced
4 Garlic Cloves, minced
1 Large or 2 Small Jalapeños, diced
1 Tbs. Kosher Salt
1 tsp. Cracked Black Pepper
2 Tbs. Cumin
1 Tbs. Garlic Powder
1 Tbs. Paprika
Directions:
- Pulse the Beets, Brown Rice, and half of the Black Beans separately in a food processor. Keep half the beans whole for texture.
- Saute the Onions, Garlic and Jalapeno in a small pan. Add to large bowl with egg and remaining ingredients. Taste for seasoning.
- Form into patties using slightly wet hands. Drizzle olive oil on each patty and brush out evenly. Bake at 350 for 20 minutes, flipping and brushing Olive Oil on the other side of the patty midway.
